Enterobacteriaceae is used as a hygienic indicator in food processing plant. They are chosen because they are relatively quick and simple to test. Their absence gives some assurance that the hygiene and food manufacturing process has been carried out properly and their presence show that there is a potential problem or failure in the manufacturing process. This group is lately been the preferred indicator organism as it involves a large group thus constituting a wider net.
Enterobacteriaceae is a family of gram-negative bacteria that is rod shaped and called bacillus. Many like salmonella are motile whilst many are not. They are not spore formers. Some bacteria produces endo toxins that are lethal to humans.
Biolife Violet Red Bile Glucose Agar (VRBG EP) is a selective plating medium for detection and enumeration of gram-negative bacteria resistant to bile salts. It complies to EP guidelines. Glucose has been added to improve the recovery of all Enterobacteriaceae. Enterobacteriaceae rapidly ferments glucose and so reduce the pH of the medium and produces purple/ pink colonies. These colonies are usually surrounded by purple halos of precipitated bile salts. Crystal violet and bile salts inhibit the growth of gram-positive bacteria.
SimPlate is a rapid method detection of total Enterobacteriaceae based on the binary detection technology. Presence is indicated by a change of color in the medium in 24-28 hours. It is an excellent and accurate method for counting in one dilution for up to 3 log cfu.
